Escargots and Escal
Escal has been a family-owned business for over 40 years. They are based in Strasburg and has been using its authentic Know-How and traditional craftsmanship to its wide and varied range of escargots. They have an original and flavorsome recipe with garlic butter that will treat all the French gastronomy lovers to a meal. The escargot is an exceptional dish for which a long and laborious effort is required. It is reserved for special occasions such as Christmas or New Year’s Eve.
You can tell that it is a family business with years of experience. The employees are very professional and easy to reach. They would also like to think along with us when it comes to the Dutch / Belgian market. We asked Christophe Jakubowski, Key Account Manager, a few questions about their company:
Can you tell us a few characteristics of Escal?
Escal is the result of more than 40 years of history… and of several centuries of tradition. The company was created in 1963 by a French-German family. As they were French gastronomy lovers, the company has been dedicated to the distribution of French food specialties in Germany. In the 1970s, Escal started the manufacture of prepared snails. Soon, Escal will become the leader of the escargots in Europe.
In the 1980s, a new shrimp and seafood processing workshop was created. The widening of the seafood range obliges the workshop to extend its capacity rapidly. At the end of the 1990s, the 2nd generation took the lead of the family-owned company. Successfully, the company started to export beyond the European borders.
The company’s values have remained the same: quality, tradition, gastronomy, and respect for the resources.
What are you, as a company, most proud of?
In short, we are proud of the quality of our products. Our continuous improvements have been rewarded by the obtention of several quality certifications like the famous French ‘Label Rouge’ or the organic label. Today Escal counts more than 400 employees, and exports in 25 countries around the world!
Can you share your favorite recipe with escargots to inspire people for Christmas dinner?
Well, Escal is specialized in Christmas products! In France, we love to eat appetizers and escargots as a starter for Christmas. The traditional recipe is “à la Bourguignonne”, with garlic and parsley butter. All you need to do is to remove the packaging from the tray and put it in the oven for about 10 minutes. As a bonus, we offer the snail forks! As an accompaniment, we advise a dry white wine and a fresh baguette to mop up the delicious butter.
What is the latest innovation the company has made?
Our Chef from the French gastronomy develops several recipes every year to always offer something new to our customers. This year, we modernized the escargots’ recipe “à la Bourguignonne” with black garlic. Black garlic gives a licorice note to the butter and a sweetened taste. That being said, the “à la Bourguignonne” recipe still remains the favorite one across borders. For people who never tried, eating escargots is always originality while this recipe is centenarian.
What is your vision for the coming years?
We would like to keep exporting “the French way of life” and keep developing the French specialties like the “aperitif” products. You know, this moment when you meet your family or friends to share a moment, having a drink and a snack before dinner? Well, we offer those little bites that you can eat with your fingers! Currently, the stuffed mussels with eatable shells are really liked by young people. Of course, we also make traditional stuffed mussels and scallops with real shells for the formal receptions!
